Sparkling wines are mainly known in france in the Champagne region which is the France most Northerly Appelation Controlee, 90 miles away on North East of Paris. Other regions are producing sparkling as well, in Burgundy and in few other regions of France using the same vinification methodology as in Champagne. Always associated with happy events, this wine elaborated with utmost care, is the result of 2 fermentations. The latest creating carbone dioxide wich dissolves within the wine in its individual bottle, so that when it is released, the bubbles stream to the surface. The grappes varieties used are Chardonnay, Pinot Noir and Pinot Meunier sometimes on their own, like chardonnay in Cremant de Bourgogne or blended together in Champagne.
