Grape is the fruit of the vine
more than a hundred varieties of grape used in france
Among which cabernet Sauvignon and merlot in Bordeaux
Gamay in Beaujolais, Pinot Noir in Burgundy
Harvesting of Grapes is 1st or 2nd week of september
But it ould be earlier or later depending on the weather conditions and the wine making methodology within the region
once the grapes are harvested they are stored in tanks  to start the 1st natural fermentation. Natural yeast, by reaction with the sugar in the pulp, will produce alcohol.
After a few days, a fermented juice is pumped out and stored
The solid parts are pressed and the the resulting juice are stored separately
then the second fermentaion will start (Lactic bacterias). it is calles molalactic fermentation. it can last for a few weeks.
the color of the wine depends on wether or not the skin of the fruit is soaking with the juice fermentation
once the fermentation is stopped the wine is stored for a few months (Years in Bordeaux) in stainless steel tank or old oak wood Barrels in Beaujolai
New oak wood Barrels are used most of the time in Bordeaux to provide tannin and wood taste to the wines
it is time now to bottled the wine and store the bottles in a cellar. this could last for a few years or many years like the renowned Grands Crus Classes in Bordeaux and Burgundy
A good Cellar should maintain a constant remperature (10-12 degrees) and hygometrees (70%). Bottles should be stored in the darkness
each wine will be differrent from the other depending on the blend of grapes used, the nature of the soil, where vines are grown, and the climate condition
each region in france, has its own specificity in terms of grapes used, climate, soil and wine making methodology (TERROIR)
Even, within the region, each wine can be much different from the other. The human touch, brought by the wine maker, is crucial in giving to each wine its own identity
